What would the holidays be without copious amounts of food? Come Christmas day, our tables usually groan under the weight of multiple dishes, the aromas of delectable chicken, pork, beef, mutton and ham making us weak in the knees until we are finally called in for the feast. Little to no consideration is usually given to that one family member who doesn’t eat meat, and that poor individual has to be content with ‘soso’ rice and peas and vegetables. However, Jamaicans are becoming more health-conscious and for many of them, that includes cutting meat and animal by-products out of their diets.
